Healthy Potato soup

This version of potato soup can be built upon.  The first "layer" is the healthiest layer that actually stands quite well on it's own (especially for children with young tastebuds who don't need the cream or dairy anyways).  After this first layer is made, you can add any of the following for taste:

-sour cream
-cheese
-bacon
-chives/green onion
-heavy cream to thicken it up
-any vegetable you want

First layer (I serve just this):  Serves about 7-9 people

Need:
5lb bag russet potatoes
1 can favorite chicken stock
salt
nutmeg
flavor seasoning (show mine in a picture)

Action:
1)  Boil big pot of water (add salt to the water)
2)  Peel and cut 5lbs potatoes (cut in quarters or smaller if it's a really large potato....this helps the potatoes soften quicker)
3)  Add the potatoes to the boiling water plus a little dash of vegetable oil to keep from boiling over.
4)  Boil the potatoes til soft and you can easily pierce with a fork
5)  Remove potatoes from heat and dump out at least half of the water (more if you want a thicker soup)
6)  Take a potato masher and mash the potatoes to desired "chunkiness" while they are still in the water.  If you want it more smooth really smash them up, if more chunks, don't go too crazy on the mashing
7)  Add a can of chicken broth
8)  Add a little more salt
9)  Add a dash of nutmeg
10)  Add the chicken/all flavor seasoning
11)  Stir and serve hot!
